I am fortunate enough to have a family that lives and fishes in Alaska. My dad and mom bring me fish when they come down for a visit!
This is fairly simple...
Ingredients:
Salmon (these ingredients were just enough for one whole salmon that was filleted into two peices)
1/3 cup instant potato flakes
1 tsp paprika
1 tsp lemon pepper
2 tsp cornstarch
1 egg
Mix the dry ingredients together and beat the egg seperatly
Turn salmon peices in the egg and coat with dry mixture, put in skillet with small amount of olive oil/vegetable oil cook for about 2-3 minutes on each side depending on the thinkness of the salmon. You'll know the salmon is cooked when it goes from being a bright pink to a pale pink.
